Volcano Toast Bread (Japanese style cheese breakfast bread)

This is a variation of the short cut toast bread that I like to bake. Same recipe but add good hard mature cheddar cheese in thick slices and roll these in during shaping. Like any food that contains cheese, this bread is always a hit with kids.

Thermomix soft bread recipe


  • 200g strong bread flour 12%
  • 60g plain flour 10%
  • 5g milk powder
  • 70g egg (or 90g if I can get)
  • + cold milk + 20g whipping cream to total of 182g liquid
  • 4g yeast
  • 30g icing sugar (I discovered recently that icing sugar gives me very soft texture but do note that the dough will be very soft to handle)
  • 6g salt
  • 30g salted french butter
  • 5 slices of mature hard cheddar cheese (don't use the processed ones)

Thermomix Directions

  • Turbo 2 seconds all the powder ingredients
  • Mix 20s speed 2 after adding the yeast
  • Add egg + cold cream + cold milk knead 4min
  • Add salt knead 2 min
  • Add cold butter in cubes knead 2 min
  • Take out the dough from the mixing bowl, rest for 15min
  • Roll out and shape, wrap in the cheddar cheese
  • Place into the 450g bread tin
  • Rest in the fridge till morning
  • Let it get to room temperature and proof till it reaches the top of the tin on counter (overnight slow proofing in the fridge gets better taste!)
  • Bake 180c 35min till brown (adjust according to your oven)
