Thermomix Singapore Style Peppery Bak Kut Teh

This is the peppery version that my family prefers. It's a great one pot meal giving us protein, fibre (vegetables) and carbs (rice).

  • Soup Ingredients
    1. Prime ribs 800g
    2. 1.5l water
    3. 5 whole garlic cloves with skin crushed lightly
    4. Canned button mushrooms (optional but more authentic like local bak kut teh)
    5. Lettuce or Tang oh
    6. 1 TBSP Dark soy sauce
    7. 1 TBSP light soy sauce
    8. 15g rock sugar
    9. Dash of 5 spice powder
    10. 1-2 pieces of licorice
    11. salt to taste
  • Spice mix
    1. 80g white peppercorn
    2. 20g black peppercorn
    3. 1 tsp szechuan peppercorn
  • Soup Ingredients
    1. Prime ribs 800g
    2. 1.5l water
    3. 5 whole garlic cloves with skin crushed lightly
    4. Canned button mushrooms (optional but more authentic like local bak kut teh)
    5. Lettuce or Tang oh
    6. 1 TBSP Dark soy sauce
    7. 1 TBSP light soy sauce
    8. 15g rock sugar
    9. Dash of 5 spice powder
    10. 1-2 pieces of licorice
    11. salt to taste

    Directions <Thermomix>

    1. Blend the peppercorn until powder and place in a soup bag <40sec / Speed 10>
    2. Blanch the meat until water runs clear. You may blanch the meat in a simmering basket too. Then run the meat in the simmering basket under a tap to rinse. <10min / 55C / Speed 3.5>
    3. Fill the mixing bowl with water and all ingredients (except the button mushrooms and vegetables) with meat in the basket and spices in the soup bag in the basket) to cook <60min / 98C / speed 3>
    4. Add the button mushrooms during the last 10min and veggie during the last 4min of cooking . Add salt according to taste before serving after the soup is done.
    5. Serve with cut fried dough fritter (you tiao) and garnish with chopped spring onions
    TIPS
    #1 Use prime ribs.
    #2 You can make a larger batch of spice mix and keep in an air tight container for quickly preparation for this soup.
    #3 Adding salt too early may cause the soup to become bitter. Always add salt right before serving
