The Kids' Preferred Fluffy Buttery Pancake Recipe

Pancake is a twice weekly affair in our household. The kids take pancakes very seriously. We decided to try the pancake recipe from the basic cookbook instead of scoring the internet and adapting our own. Guess what. It worked. These days, we only use this pancake recipe and it's been thrice in a row this week for supper and breakfast! Of course it goes really well with homemade ice-cream too.

Ingredients (depending on size & thickness of your batter pour, you can make about 10-12 pieces)

  • 2 eggs
  • 50g butter and more for pan frying
  • 30g sugar
  • 1 TBSP baking powder
  • 1/2 tsp salt
  • 200g plain flour (we use unbleached)
  • 300g full cream milk (we use baby's milk powder milk and its heavenly)

Directions <Thermomix>

  1. Melt butter <2 min, 70 degree, speed 1>
  2. Put all the rest of the ingredients into the mixing bowl or you may whisk or mix if you do not have the Thermomix <40 sec, speed 5>
  3. Heat up some oil
  4. Pour pancake batter (you can keep the batter in the fridge for up to 2 days)
  5. Serve hot
