Posted by Divine Chef on

This is one of the easiest meat dish to whip up with the Thermomix when you are a time-starved mummy like me who needs to work and cook. When I am pressed for time, I get very stressed because it's the whole family waiting to be fed. The man at home is my biggest food critic. If he does not have a second helping, it means the food is not great. Curry chicken is something I have never won his approval despite my numerous tries. And since I have an authentic tikka recipe from an Indian friend which I have been dying to try, I decided to modify the recipe to use my trusty Thermomix to make the tikka paste from scratch. A bigger batch (just multiply the recipe below) then needed can be made to use for meat, prawn, chicken and fish dishes, for cooking tikka masala curry, or even to use as a sandwich spread. As there will be no preservatives, this can keep in your fridge for up to 6 weeks (you need to add a layer of...

How to cook Nasi Lemak with chicken wings, fried eggs and sambal chilli from scratch in one hour (Thermomix recipe)

Posted by Divine Chef on

Nasi Lemak means fragrant rice and it is rice cooked with rich coconut milk and infused with a bunch of pandan leaves that cooks together with the rice. Nasi Lemak is usually eaten with a condiment of fried or hard-boiled egg, chicken wings, sliced cucumber, crispy peanuts and ikan billis (tiny fish) and most importantly the sambal chilli. A good chilli make or break the Nasi Lemak - although some may argue the rice is more important. For our household, the chilli is king - screw up the chilli - the Nasi Lemak experience will be "destroyed".  To cook it...
