The kids bugged me to make castella cake. Well, I have never really been a cake baker but the process seemed easy enough after watching several youtube videos. Cooking caramelised Kaya with Thermomix

This is super yummy kaya, tasting just like the good old kopi tiam brown kaya and absolutely so delish on toasted bread or absolutely divine spread on a slice of artisan bread. The secret is to use fresh coconut milk if possible as packet ones contain anti-coagulant agent that affects the texture of kaya when used. The other tricky ingredient will be the size of the eggs. This is unbelievably easy to make and a hit with everyone - young and old. And the best? This is gluten free - just nice for Kayla, who's on a trial gluten-free diet, to see if a clean-up of her wheat-rich diet will clean up her allergy issues. As she loves all things wheat such as pastas, noodles and udons,  she has been complaining incessantly about her new limited diet. How to blanch meat using Thermomix

Besides peeling garlic skins off for me, Thermomix is great in many other ways too. I used to hate boiling water then blanching the scum off. Did you know that actually you can just add meat into the mixing bowl and pour in water over the meat and blanch for 15min at 50 degree, reverse, stir speed. Pour out the meat into the simmering basket and rinse under running water to remove remaining scum on the meat. Voila! The meat is ready to cook!
