How to make vanilla ice cream at home

After making some mushroom soup the other night, I decided to use the balance cream to make ice cream. We have done so many flavours and ran out of ideas for the ice-cream, so we decided to go vanilla this time - although I was out of the good vanilla bean and we only use vanilla extract.  I can guarantee homemade ones are always popular, especially if the kids participated in the making of the homemade ice-cream. I was asked every other hour if the ice-cream was ready from the time it went into the freezer till I allowed them to eat it the following day.

  • 2 vanilla pods (or 3-4 tsp pure vanilla extract)* 
  • 600g whole milk
  • 200g fresh cream (do not use skim if you want creamy ice cream)
  • 150g brown sugar
  • 6 egg yoks
  • Pinch of salt

*Note : There is a difference between vanilla pods, extracts and essence. If you do not any vanilla pods, the next best substitute is vanilla extract which is usually made of vanilla infused alcohol while essence is almost always synthetic and may not taste like real vanilla at all.  After all, if you are already making your own ice-cream to avoid chemicals, please use vanilla pods or extracts instead of anything synthetic.

  1. Scrap the vanilla from the pods or add your vanilla extract into the mixing bowl
  2. Add milk, cream, sugar, egg yolks and pinch of salt, cook 8 minutes, 90 degree, speed 2 
  3. Pour the mixture into a tray that can be frozen (no taller than 4 cm so that is is easier to freeze)
  4. Freeze at least 10 hours
  5. Remove the frozen mixture, cut into cubes, blend 20 sec, speed 6 
  6. Blend another 10 seconds at speed 4 with the spatula
  7. You may have to do this in 2 batches for more even blending and fluffy creamy result
  8. Store back into the fridge for at least 15 minutes before serving if the mixture becomes a little soft from the blending earlier
  9. You may garnish with crushed toasted nuts and drizzle with chocolate, caramel sauce or maple syrup (reduce sugar further if you intend to use sauces for serving to avoid sugar overload)
  10. We serve our ice cream into cones
