How to get restaurant style crispy pork belly a.k.a sio bak a.k.a roast pork

I'm excited. It is possible and finally I did it. For years, I have been dissatisfied with my sio bak being not quite the crispy crunch nor the juicy meat I wanted. Finally. Thanks to my friend Ricky, it is possible to do this at home. Here's how.

Easy Crispy Pork Belly Sio Bak Thermomix Recipe Chefanddivine

Ingredients

  • Large pork belly slab (1kg is good)
  • Boiling water
  • Himalayan salt
  • 1-2 TBSP EVOO
  • 1-2 TBSP Vinegar
  • White wine (I use a small 187ml bottle of chardonnay)

Directions

  1. Scald to rinse clean the pork with the boiling water
  2. Dry the meat
  3. Rub the skin with salt, oil and vinegar - make sure the skin is completely seasoned 
  4. Boil 700g of water till it reaches varoma temperature
  5. Then place the seasoned meat onto a metal dish and place it inside the varoma dish and steam about 15min/varoma/sp1
  6. Preheat oven to 220°C
  7. After steaming completes, remove the meat and dry the skin
  8. Score the skin in diamond criss crosses and reapply the seasonings
  9. Place the meat back into the metal dish and pour white wine into the dish until it reaches the fat layer (but not the skin)
  10. Use satay sticks to prevent the meat from curling (if needed)
  11. Place the dish into your air fryer (or oven) and airfry/bake for 35-40min until the skin is crispy 
  12. Remove the meat and cut to serve
