Ingredients
- 250 g butter
- 180g sugar
- 250 g self raising flour
- 250 g rolled oat
- 4 to 6 chopped nuts (I used mixture of a handful of walnuts and pecans)
- 1 egg
- 120 g desiccated coconut
- 1/4 tsp bicarb
- 1 tsp vanilla essence
Directions
- Cream butter, sugar and vanilla <1 min / Sp 3.5>
- Add egg <10 sec / Sp 3.5>
- Add all remaining ingredients <30 sec / Sp 3.5>
- Chill the dough in the fridge for 15min while you preheat the oven
- Roll into balls on greased or lined baking tray
- Press with fork or cookie press for some imprints
- Baked at 150 -160 C (adjust according to oven, reduce 20C for fan forced ovens) for 15 mins or until brown

I need to cut back on sugar for health reasons. If I don’t care for sweetness, how much can I reduce the sugar to? I’m a newbie to baking, I assume a certain amount of sugar is necessary for baking recipes to work?
