Thermomix Crunchy Oat Cookies

The kids and me were planning to make cookies as our Christmas party giveaway to friends and relatives. This needs to be another dedicated exercise altogether because the cookies turned out so good that they have been completely eaten up by the munchkins!!!!  Kudos to my friend Jeffrey, this recipe is so easy!

Thermomix crunchy oat cookies by chefanddivine

Ingredients

  • 250 g butter
  • 180g sugar
  • 250 g self raising flour
  • 250 g rolled oat
  • 4 to 6 chopped nuts (I used mixture of a handful of walnuts and pecans)
  • 1 egg
  • 120 g desiccated coconut
  • 1/4 tsp bicarb
  • 1 tsp vanilla essence

Directions

  1. Cream butter, sugar and vanilla <1 min / Sp 3.5>
  2. Add egg <10 sec / Sp 3.5>
  3. Add all remaining ingredients <30 sec / Sp 3.5>
  4. Chill the dough in the fridge for 15min while you preheat the oven
  5. Roll into balls on greased or lined baking tray
  6. Press with fork or cookie press for some imprints
  7. Baked at 150 -160 C (adjust according to oven, reduce 20C for fan forced ovens) for 15 mins or until brown
Tip : Its even faster using an Air Fryer 😀

  • I need to cut back on sugar for health reasons. If I don’t care for sweetness, how much can I reduce the sugar to? I’m a newbie to baking, I assume a certain amount of sugar is necessary for baking recipes to work?
