Cooking caramelised Kaya with Thermomix

This is super yummy kaya, tasting just like the good old kopi tiam brown kaya and absolutely so delish on toasted bread or absolutely divine spread on a slice of artisan bread. The secret is to use fresh coconut milk if possible as packet ones contain anti-coagulant agent that affects the texture of kaya when used. The other tricky ingredient will be the size of the eggs. Avoid too large or too small ones. Use the average sized ones you can find in your supermarket because the size of your eggs will affect the overall volume, cooking time, and thus resulting texture. As the recipe does not call for blending kaya juice but added caramelised (browned) sugar, the kaya will have a rich brown colour and the toasty aroma of caramel.   • Sugar #1 80g (for caramelised sugar)
  • Pandan leaves about 3 pieces
  • 270g fresh coconut milk (from the wet market if you can, if not packet ones such as Kara)
  • 3 whole eggs (kampung eggs recommended)
  • 2 egg yolks
  • Sugar #2 70g (for the egg mixture)

Directions <Thermomix Directions>

  1. Melt the first portion of sugar ~ 80g
  2. When it browns and gets melted, add in the pandan leaves
  3. When the pandan aroma is apparent, add the coconut milk and stir to even up the mixture and add into your mixing bowl
  4. In a separate bowl, add the eggs
  5. Stir in the second sugar portion ~ 70g 
  6. Pour the egg mixture into the mixing bowl
  7. Cook 60min / 80 degree / gentle spoon stir
  8. When you are done cooking, let the kaya cool before storing
  9. As it cools, you will notice the kaya become thicker and less liquid than compared to when it is just cooked
  10. Enjoy with freshly toasted bread and thin slices of butter 😋😋
