Chinese Restaurant Style Sweet Corn Chicken Soup

Posted by Divine Chef on

This is the ultimate comfort food for Sherine when her braces are tightened. Every month, the braces are tightened and it will hurt for the next 3 days. Because of the pain, she will not be able to eat any food that is too hard. It's time for her favourite Chinese restaurant style sweet corn chicken soup again. The soup is amazingly easy to make and very tasty.

  • Quarter a large yellow or white onion
  • 100g Chicken Breast (roughly chopped into 2 large pieces)
  • 1.5 TBSP of Thermomix made chicken stock powder (adjust according to how salty your stock powder is) mixed with 1.5 cup water
  • 1 pack/tin of creamed corn
  • 1 pack/tin of whole corn or fresh corn
  • 2 eggs beaten
  • Spring onion
  • Dash of shao xing
  • Salt & pepper to taste
  • Cooking oil 20g

  1. Chop the onion for <10sec / speed 7>
  2. Saute the onion with the oil <3min/120deg/speed 1>
  3. Add stock powder, corn, water, chicken and cook <10min / 98deg / speed 1 >
  4. Remove the chicken and set aside, chop into small cubes when they are cooler to touch
  5. Beat the egg and add a dash of shao xing wine into the beaten egg mixture
  6. Continue to cook for another <5min / 98deg / speed 1> with egg mixture drizzled from the lid hole
  7. Add the chicken pieces from the lid hole while cooking the soup
  8. Add salt and pepper according to your taste preference (if needed - remember the stock powder makes the soup salty too)
  9. Serve hot and garnish with spring onion
