Another Thermomix Pancake Recipe - Soft & cake-like texture

We ran out of bread last night. My usual quick fix solution is to use my trusty Thermomix to spin a quick pancake mix as a substitute for bread. Using ingredients from the kitchen, it is a no brainer to make fresh pancake mix rather than long shelf-life pre-mix that contains preservatives.

In less than 15 minutes, the pancake mix was done and I stored it in the fridge so that Wati, our helper, can cook it in the morning for the kids.

Ingredients (about 10-12 pieces depending on amount of batter poured)

  • 50g butter 
  • 200g Flour (unbleached plain flour)
  • Milk 300ml
  • 2 eggs
  • 30g sugar
  • 1/2 tsp salt
  • 1 TBSP baking powder

Directions <Thermomix directions>

  • Melt the butter <2min / 70 degree / speed 1>
  • Add all the ingredients and mix <15 sec / speed 5>
  • Melt some butter on a frying pan
  • Pour some batter on the pan 
  • Turn pancakes over on each side and fry until golden brown
  • Serve hot
