Easy Kids Meals : Air Fried Cheese Macaroni

This is a guaranteed winner with kids.  But because its "heaty", I usually try not to over-indulged, and the kids get to eat this like once every 2 months. Its super easy to make this with the air fryer as long as you have some left over rice (you can also use freshly cooked rice) or macaroni.  You can interchange this recipe with rice or macaroni or even with ramen (a fusion okonomiyaki variant).

Chef and Divine Easy Kids meals recipe : Air fried cheesy macaroni

Ingredients (serves 2 children)

  • 1 cup uncooked macaroni
  • 100ml cooking cream (or milk if you want to lower the fat content)
  • 1 Portobello or 4 brown mushrooms
  • Shredded Cheddar and Mozorella cheese
  • 1 slice of Gouda or Edam or Emmental cheese
  • Salt & pepper
  • 1 garlic finely chopped
  • 1 chopped onion 
  • 1 TBSP butter
  • 200g cooked chicken/ham/bacon 
  • 3 stalks of asparagus or several heads of brocoli, blanched

Directions

  1. Boil the macaroni in water with some olive oil and pinch of salt
  2. Once booked (you can see the macaroni would have expanded more than tripled its original size), drain and set aside
  3. Saute some finely chopped garlic and chopped onion in the butter
  4. Once fragrant, add the cooked macaroni 
  5. Stir in the meat 
  6. Add the vegetables
  7. Pour into the mixture the cooking cream 
  8. Add the mushrooms
  9. Pinch of salt and pepper to taste
  10. Add one slice of gouda 
  11. Stir until cheese is thoroughly mixed 
  12. Remove from stove and place the content into an air-fryer baking tray
  13. Top the macaroni with the shredded cheddar and mozorella
  14. Air fry for about 15min (160 degree) and 5 min (180 degree) or until sufficiently crisp and brown
  15. You may also bake in an oven at about 175 degree for 15 minutes or until brown and crisp
  16. If you use ramen as the base, you can top the cooked baked dish with Japanese terriyaki sauce, mayonnaise, and bonito flakes
