30 Minute Meals : How to Cook Basil Chicken

To me, basil chicken is a comfort food. It is extremely easy to prepare dish that is always a crowd pleaser. Basil is also a healthy herb that is both tasty and beneficial for its support to cadiovascular health and healing benefits to inflammatory problems like rheumatoid arthritis or inflammatory bowel conditions.
Ingredients
- Chicken fillet 200-250g (cut into bite size cubes)
- Bunch of basil about 50g
- 1 tbsp fish sauce
- 4-5 cloves of garlic
- 2 shallots
- 4-5 small green chillies
- 1-2 small red chilli padi (more if you like it spicy)
- 10g cooking oil
- 1/2 tsp sugar
- 1/2 tsp light soy sauce
- Drizzle of dark soy sauce for colour
- 1 tsp oyster sauce
Directions <Thermomix directions>
- Marinate the cut chicken in fish sauce for couple of hours
- Chop the garlic, shallot, chillies coarsely <10s, speed 6>
- Heat up your oil and saute the chopped mixture until fragrant <3min, varoma, speed stir>
- Add the chicken and cook until done <10min, 100 degree, speed stir reverse with butterfly whisk>
- Add 1tbsp water if it gets too dry
- Toss in the basil and off the heat <last couple of minutes add the basil to toss and spin>
- Serve with hot rice (and a sunny side up)
