30-Minute Recipe - Crunchy & Nutty Chocolate Cookies

The kids wanted to to eat cookies and we decided to make some crunchy and nutty cookies. We added some chopped walnuts and almonds into the dough. The first tray of cookies were gobbled up in less than 5 minutes and I had to ration the second tray to ensure leftovers for breakfast tomorrow morning :-)
Ingredients (makes about 2 trays)
- 1/2 cup Chocolate Powder
- 1/2 cup Chocolate Chips
- 1/2 cup mixed nuts (we used chopped walnuts and almonds)
- 110 g Plain Flour
- 40g Caster Sugar
- 40g Brown Sugar
- 1/2 Egg
- 50g Butter
- 1 tsp Baking Powder
- Teeny pinch of Salt
Directions <Thermomix Instructions>
- Preheat oven at 180 degree celcius
- Put all the ingredients in the bowl in the following order: flour, sugar, salt, butter and the egg.
- Mix all the ingredients for <Mix 25 secs speed 7>
- Add the chopped nuts into the dough <Mix 5 secs speed 4>
- Scoop the dough and roll into 1cm small balls and flatten if you want wider flatter crispier cookies or leave them in balls if you want chewier inside and crunchy outside cookies
- Place the cookie dough onto a baking tray with baking sheet
- Bake for about 10-15 min
