Homemade Strawberry Ice-cream sweeten with Honey

Requires a bit of effort but trust me - homemade ice-cream has that wholesome fulfilling taste that is incomparable to store bought ice-creams.  I felt less guilty eating ice-cream (although it is not less fattening.. hehe) - but the thought that we are eating less chemicals, adding healthier no preservative ice-cream is comforting.

  • 2 egg yolks
  • 250g whipping cream
  • 250g organic fresh milk
  • 50g honey (I used Verace's Truffle Honey
  • 1 TBSP vanilla essence
  • Pinch of salt
  • Some frozen strawberries (or any other fruits you have at home, just throw into the freezer)

Directions <Thermomix directions>

  • Place all the ingredients into aa mixer except the fruits and cook at 80 degree celcius <80 degree 5 min speed 4>
  • Place mixture into a stainless steel bowl and stir in the fruits and place inside your freezer for 3-4 hours or until firm but not completely frozen hard
  • Remove from freezer, cut into cubes and blend again <20 sec speed 9> <10 sec speed 45>
  • Return back to freezer after another couple of hours when it is harden it is ready to be served
