Focaccia with Organic Sundried Tomatoes using the Thermomix

Took only an hour and a half and we had tuna as well as grilled chicken focaccia for supper last night.... forgot to take pictures but the second round focaccia bake with overnight proofing turned out even better with super light bread and very crunchy crust.  I should have included more sundried tomatoes as they balanced well with the salt added to the dough to make this a mildly savoury bread.  Yum.. 



Directions using the Thermomix

  • Place water, yeast and oil into the Thermomix bowl. Mix 5sec/speed 6
  • Add flour and salt. Mix 20sec/speed 6
  • Knead for 2-3 minutes (Note: the dough will be very sticky)
  • Add chopped or shredded sundried tomatoes into the dough during the last minute of kneading
  • Remove dough and let it rise in a warm place (I usually put in the oven) for up to 1 hour
  • Knock down and shape and allow to rise for another half an hour in the same warm place
  • You may want to garnish with EVOO or herbs and/or some salt
  • Bake in the oven at 200 degree celcius for 20-30 min or until golden
